Saunders was promoted to command of /Trial/ while she was part of Commodore George Anson's squadron for the Pacific expedition of 1740–1743. /Sunderland/ was not part of hat squadron. Saunders was second lieutenant in Anson's flagship /Centurion/ when the expedition left England on 29 September/10 October 1740. He moved up to first lieutenant in November when first lieutenant David Cheap was promoted to commander as CO of sloop /Trial/, and to command of /Trial/ himself when Cheap was promoted to command of armed transport /Wager/ (later wrecked on the coast of Chile). He was promoted to captain when /Trial/ had to be scuttled and her guns and crew transferred to captured Spanish merchantman /Trial Prize/, former /Santa Maria de Aranzazu/. Although /Trial Prize/ was armed only with 20 × 3-pounders from /Trial/ and abandoned hired transport /Anna/, Anson was able to designate her as a 6th rate because of her tonnage of 600 in British measure, entitling Saunders to the rank of post captain.

Wikipedia possibly has the corrected birth date, but either you are confusing him with someone else or the memorial is wrong for his date of death.
A quick check on the Westminster Abbey site gives a dead of death agreeing with that in the data, 7th Dec 1775.

Wikipedia has his date of birth as 19.9.11 and his memorial in Westminster Abbe=y has his date of death as 21 November 1761
